Tata Sampann Recipes – Tofu and Paneer Bhurji

Everybody has the right to enjoy a lip-smacking meal, chef or no chef. And that is just where the ‘bhurji’ steps in.

Known widely as a popular Mumbai street food, ‘bhurji’ is a ‘mash’ of chopped vegetables, butter/cream and egg, slow-cooked over a frying pan. The vegetarian gourmands usually go for a non-egg substitute, such as paneer (cottage cheese) and/or tofu. A dish that young hostel-dwellers absolutely swear by, it’s a quick whip, a treat for the tastebuds, and at the same time, provides you with a host of nutrients such as protein and carbohydrates.

Being high in protein – 200gm of paneer gives approximately 36gm of protein – this dish makes for a very good post-workout meal option. Vegetarians undergoing weight training are recommended to include paneer/ tofu in their daily diet to increase their protein consumption. Moreover, paneer can also help in cutting down food cravings by giving a feeling of fullness, thus aiding in weight management.

The allusion or likening to ‘scrambled eggs’ emerges from the part when the protein – egg or tofu or whatever you may – gets added to the mix and slow stir-cooked to form a fluffy, paste-like substance which further gets broken down to small soft bits. To add flavour and aroma to this classic dish, dry spice powders such as turmeric and red chilli are added to it.

Ingredients


For the dough

  • 200 gms tofu, grated
  • 200 gms paneer, grated
  • 1 tbsp. oil
  • ½ cup chopped onions
  • 2 tsp. ginger-garlic paste
  • ½ cup chopped tomatoes
  • ½ tsp. Tata Sampann Turmeric powder
  • 1 tsp. Tata Sampann Red Chilli Powder
  • 1½ tsp. Tata Sampann Paneer Masala
  • Salt to taste
  • 1 tbsp. chopped coriander leaves

For The Filling

  • Heat oil in a pan.
  • Add onions & sauté.
  • Add ginger-garlic paste & sauté till onions turns golden brown.
  • Add tomatoes & sauté till soft.
  • Add turmeric powder, chilli powder, Tata Sampann Paneer Masala and sauté for 1 min.
  • Add 4 tbsps. of water, mix & cook for 3 mins.
  • Add paneer & tofu, mix and cook for 1 min.
  • Add salt, mix & cook for 1-2 minutes.
  • Add coriander leaves & mix well. Serve hot.
