The minute we think of besan or gram flour, the first image that comes to our mind is of hot, scrumptious pakoras straight out of the kadhai. While, pakoras in their various forms are one of the most popular snacks made using besan, there are many other snacks that bring the goodness of protein-rich gram flour to your plate in a delicious form without compromising on the nutritional value. Whether it is a monsoon evening or winter morning, gram flour snacks are a perfect companion to enjoy the weather to the fullest.

Suralachi Vadi

Also known as Khandvi in Gujarati cuisine, Suralachi Vadi is a Maharashtrian snack which has gram flour, buttermilk, turmeric, ginger-garlic paste and spices in its recipe. It is garnished with grated coconut and coriander along with an aromatic tadka. The batter is cooked in frying pan on lowest heat and spread thin on greased plate. Once it is cool, it is rolled to make the Suralachi Vadi. This can also be stuffed with coconut and coriander.

Pithore

This Rajasthani snack is easier to make but tastes equally delicious. It uses similar ingredients but results into a distinctly different snack. Batter consisting of besan, turmeric powder, green chili paste, fenugreek leaves (methi) and spices is cooked on a low flame. This mixture is poured in a greased thali to cool. After 15-20 minutes, it is cut into diamond shaped small portions. A tadka of cumin seeds, hing, and sesame seeds along with coriander is used as a garnish.

Khaman Dhokla

This widely known snack also uses besan as the base ingredient. Khaman Dhokla is a steamed dish which resembles a cake in a savory form. Gram flour is mixed with rava (semolina) for the batter. Ginger-garlic paste, green chilies paste, turmeric powder, hing, lime juice and fruit salt are a part of this recipe. Khaman Dhokla is steamed as a cooking method. The tempering consists of mustard seeds, cumin seeds, sesame seeds, green chilies, sugar and lime juice. This can be modified as per preferences. Additionally, Khaman Dhokla can also be made in a microwave for a healthier version.
